Notchland Inn Recipes

MAPLE MUSTARD SALAD DRESSING:

(makes 2 cups or more)
This is one of our most often requested recipes.

1/4 cup Coarse Mustard
1/4 cup Balsamic Vinegar
1/3 cup Maple Syrup
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Tarragon
1 cup Olive Oil

Combine all of the above ingredients (except olive oil) in an electric mixer, blender or food processor. When well combined add the olive oil slowly. Beat until very well combined or it will separate.

When preparing your salad before service, put a bit of the dressing at the bottom of your salad bowl. Top with greens and other salad ingredients, then chill. When ready to serve, be sure to toss well from the bottom of the bowl. Taste before adding additional dressing.
